Italian Pearl Farro with mushrooms, peas, and onions
This is a great side dish and quite healthy!
Ingredients:
2-3 t. Olive oil
1 large clove garlic, chopped
6 large Mushrooms, cleaned and sliced
1/2 cup peas (I use frozen – no need to thaw, but you an if you wish)
1/3 cup diced onion
1/2 cup Farro, Italian Pearled (I use Nature’s Earthly Choice)
1/2 t. Paprika
1/2 t. dried thyme
Salt and Pepper to taste
Splash of dry white wine
1 cup low sodium chicken broth (heat in a pan or microwave oven until hot)
1/2 cup grated Parmesan cheese
