Donna made this delicious salad for our book club last night (6 March 2024). Everyone loved it!
Ingredients
1 can lentils
1 cup finely diced carrots
1/3 cup finely diced celery
1/4 cup finely diced red bell pepper
1/4 cup finely diced red onion
1/4 cup minced parsley
1 garlic clove, minced
5 Tbsp lemon juice
1 tsp olive oil
1 Tsp kosher salt
Freshly ground black pepper, to taste
